  • In a 9-inch skillet, melt the butter and stir in the cheese, shallots, and chives. Cook, stirring, over low heat gradually stirring in the wine until the mixture is smooth. Pour in the eggs and cook, stirring, over very low heat. These will be extremely loose. Correct seasoning. Serve on a warm platter and garnish with toast triangles. Serve immediately.
