  • Preheat oven to 350°F.
  • In a medium skillet, saute the onions in the butter until soft. Add the corned beef and potatoes and mix well. Stir in the cream, salt, and pepper and shape the mixture into 6 3-inch round patties, about 1 inch thick. Arrange the patties in buttered baking dishes and make an indentation in the center of each. Slide an egg into the center and season with salt and pepper. Bake until set.
