	<li>Preheat oven to 350&deg; F.</li>
		<li>In a 9-inch skillet, saute the mushrooms in the butter until the liquid has evaporated. Remove yolks from eggs and sieve, then stir into the mushrooms along with the cheese, tomato paste, and cream. Stuff the whites with this mixture. (Use a #4 large star tip in a pastry bag to make the job easier and the result prettier.) Arrange eggs in a baking dish and reheat in the oven. Coat with warm Hollandaise just before serving.</li>
		<li>Can be prepared for baking the evening before.</li>
