  • In a bowl, combine the sausage meat, egg, 1 tablespoon parsley, and anchovy paste. Mix well.
  • Heat the oil to 375° F.
  • Spread the bread slices with sausage mixture, mounding in the center. Cut into triangles. Fry until golden and cooked through, about 3 minutes. Sprinkle with parsley.
  • Can be assembled for frying the day before. Fried toasts can be frozen and reheated in a 350° F. oven on paper towel-lined sheets until hot.
  • Note: For variety, add 1 teaspoon minced gingerroot and omit anchovy paste. Or add ¼ teaspoon crushed fennel seeds and a pinch of marjoram, omitting the anchovy paste.
