<introduction>

I think the combination of Canadian bacon and maple syrup is nothing less than amazing, and you simply can't ask for a more unusual, satisfying dessert after a hearty meal than this easy custard, which can remain in the refrigerator till serving time. I do advise that you go easy on the nutmeg, and that you test the baked custard with a knife after about 30 minutes to make sure it's just set and not overcooked.

 <instructions>

Preheat the oven to 325°F.

In a skillet, heat the butter over moderate heat, add the bacon, stir till browned lightly, about 5 minutes, and drain on paper towels.

In a mixing bowl, combine all remaining ingredients except the nutmeg and whisk till the mixture is thoroughly blended. Stir in the bacon and pour the mixture into a 1-quart baking dish. Place the dish in a large, shallow baking pan, add enough warm water to the pan to come up 1 inch around the dish, sprinkle with nutmeg, and bake, uncovered, till the custard is set and a knife inserted in the center comes out clean, 35 to 40 minutes. Remove the custard from the water bath and cool on a rack to room temperature. Chill briefly before serving.
