	<li>Preheat the oven to 425&deg;F.</li>
		<li>Steam the cauliflower over boiling water until just tender, 3 to 4 minutes. Remove from the heat and set aside. Place the cream with the shallots in a large skillet. Bring to a boil over medium-high heat, uncovered, and continue to boil for 10 minutes.</li>
		<li>Remove from the heat, and add the cauliflower, salt, and pepper. Transfer to a buttered 2-quart casserole dish. Sprinkle evenly with the Gruyere cheese. Bake, uncovered, for 10 minutes, until golden and bubbly.</li>
