	<li>Bring a medium saucepan of cold water to a boil. Add the corn, cover, and cook until just tender, 2 to 3 minutes. Remove from the heat, drain, and place in a medium-size bowl with all of the ingredients except the cheese, and mix thoroughly. Serve at room temperature, with the Manchego cheese sprinkled on top.</li>
