	<li>To make the burgers: Heat the butter and oil in a small skillet over medium-high heat. Add the onion, reduce the heat to medium-low, and cook, stirring occasionally, until the onion is very tender, 8 to 10 minutes. Remove from the heat, transfer to a large bowl, and allow to come to room temperature. Add the remaining burger ingredients to the bowl, and blend with your hands until well combined. Divide into 6 equal portions and shape into patties.</li>
		<li>Prepare the barbecue to medium-high heat and cover the grill with aluminum foil. Cook the burgers with the grill cover on for 5 minutes. Remove the grill cover and cook for an additional 5 minutes. Turn the burgers and cook, uncovered, for 8 to 10 minutes, until cooked through (no longer pink). Transfer to a platter and cover with aluminum foil.</li>
		<li>Grill the burger buns, cut side down, until lightly toasted, 1 to 2 minutes.</li>
		<li>Spread 1 tablespoon of the mayonnaise on the bottom half of each bun, and 2 tablespoons of goat cheese on the top half. Top each burger with &frac14; cup of the Pepper &amp; Onion Relish, place the burger on the bun, and serve immediately.</li>
		<li>Heat the oil and butter in a medium-size saucepan over medium heat. Add the peppers, onion, and garlic, and cook, stirring occasionally, until very tender, about 30 minutes. Season with salt and pepper to taste. Serve warm (this can be made ahead and reheated).</li>
