<introduction>

I live in Woodside, near the amazing Korean grocery store Han Ah Reum. It’s summer, and I decided to get some Italian sausages from Ceriello in Grand Central Market, which is along my commute home. I decided to spice it up a bit. Since I don’t know the PDT number, but the New York Magazine photo of the PDT Chang dog has been burned onto my brain since I first saw it, I decided to try to make my own kim chee relish. The results were delicious IMHO! Try for yourself… (Pictured above with homemade chex mix.) This recipe makes ALOT of relish.

 <instructions>

Dice red onion coarsely (3/4 inch chunks).

Slice kim chee coarsely also.

Sautee red onion in a little bit of olive oil until just turning soft and fragrant.

Add sliced kim chee. Combine with onion and sautee until mixture is red, slightly sauce-like, and soft enough to puree.

Cool for one minute and pour or scoop into a blender (I used an immersion blender with the tall measuring cup it came with). For every 1 ½ cups of kim chee/onion mixture add 1 tbsp of ketchup and 1 tbsp of plum sauce.

Pulse several times until mixture is the texture you want.

I served with a Ceriello sweet Italian sausage with fennel on a toasted potato hot dog roll, but imagine it would also be good with rice and bulgolgi.
