dairy free whole grain banana bread Recipe
I’ve found that many whole grain recipes call for whole wheat flour, but my family didn’t like the taste so I began experimenting with other whole grains. I found that substituting 1/2 whole grain barley and 1/2 whole grain oat made a nice consistency and tasted better. My family is also dairy sensitive so I began experimenting with other liquids when milk is in a recipe. some times apple juice can be substituted and other times soy milk works.
- 2/3 c. sugar,
- 1c. whole grain oat flour
- 1 c. whole grain barley flour
- 1/3 c. canola oil
- 1 t. baking powder
- 1/2 t. baking soda
- 1/2 t salt
- 1 t vanilla
- 2 eggs
- 3 Tbl soy milk
- 5 very ripe mashed bananas
- optional 1/2 c. chopped nuts
- mix all dry ingridence, (crush all lumps from oat flour )
- make a valley in the center and add wet
- allow to stand for 20 minuets before baking
- bake @ 350 degrees for 1 hr in a well greased large loaf pan.
