I love to kick off a summer party with a ice cold Gazpacho amuse.
INGREDIENTS
- 2 cloves garlic
- 1 large sweet onion- rough chopped
- 1 cup loose parsley- stems removed
- 6 large ripe tomatoes-seeded and rough cut
- several dashes tabasco sauce
- 1/4 cup red wine vinegar
- few sprigs fresh cilantro- stems removed
- 3 T olive oil
- 2 large cucumbers-peeled and seeded
- salt and pepper to taste
INSTRUCTIONS
- Small dice about 1/4 of the veggies- set aside.
- Put everything else in a blender or food processor and blend until fairly smooth.
- Combine the chunky with the smooth and chill until cold- at least 2 hours
- Garnish with some fine minced herbs- and serve on chilled spoons.
