Gazpacho Recipe

I love to kick off a summer party with a ice cold Gazpacho amuse.

INGREDIENTS
  • 2 cloves garlic
  • 1 large sweet onion- rough chopped
  • 1 cup loose parsley- stems removed
  • 6 large ripe tomatoes-seeded and rough cut
  • several dashes tabasco sauce
  • 1/4 cup red wine vinegar
  • few sprigs fresh cilantro- stems removed
  • 3 T olive oil
  • 2 large cucumbers-peeled and seeded
  • salt and pepper to taste
INSTRUCTIONS
  1. Small dice about 1/4 of the veggies- set aside.
  2. Put everything else in a blender or food processor and blend until fairly smooth.
  3. Combine the chunky with the smooth and chill until cold- at least 2 hours
  4. Garnish with some fine minced herbs- and serve on chilled spoons.
