Addictive Indian-style Green Beans Recipe
This is my family’s traditional preparation of french cut green beans. You can apply this recipe to other vegetables, too. We use the same method for frozen cut okra, corn, and diced potatoes. It’s by far my favorite way to prepare vegetables, especially ones that I buy frozen as opposed to fresh.
You need to cook these green beans for as long as directed in the recipe, or else they won’t taste right. The beans will look and taste different than if they had been quickly sauteed, steamed, or stir-fried. With this method it’ll seem like you’re overcooking the vegetables, but this is the authentic Indian way, and it tastes amazing despite the minimal ingredients involved.
- 1 16-ounce package french cut green beans (frozen, not canned)
- 1 teaspoon turmeric powder
- 1/2 teaspoon red chili powder
- 1 1/2 teaspoons salt
- 2-3 tablespoons olive oil
- 1/3 large white onion, diced (optional)
- 1/4 cup finely shredded unsweetened coconut (optional)
- Place a large, wide non-stick pan on medium to high heat. Add olive oil.
- When hot, add onions (if using) and cook until golden. Add green beans. Cover and cook for 10-15 minutes.
- Uncover and season with turmeric powder, salt, red chili powder, and shredded coconut (if using).
- Continue to cook uncovered for 10-15 minutes, stirring frequently so that the beans don’t burn. When done, the beans will be dark green and will have reduced considerably.
- Remove from heat and serve over rice.

My husband liked this a lot. Very easy, just dump in the frozen green beans and then later dump in a dish of spices/coconut. I didn't do the optional onions. I used a mix of ancho/piquin/cayenne ground chilis. I found that I would like less salt. Perhaps this was on account of my mix of chilis. Thank you!
Fantastic tasting, healthy recipe - it's a keeper!
Not sure if this recipe would work well with fresh green beans--it's important these beans be really soft and julienned. I've uploaded another recipe that is much better suited to the fresh kind.
How long do you need to cook if you're using fresh green beans?
I added whole unsalted cashews in the last 5 minutes of frying last night and it was reeeally tasty.
You let the onions become golden then add the frozen green beans.
I'm interested in cooking these too but I'm wondering; In step 2 after adding the onions do you immediately add the green beans as well? Or do you brown the onions, then add the green beans?
I don't bother to defrost. Hope you like them...watch them closely as they finish frying or they'll burn! Not that I've ever done that before...
I can't wait to cook these - probably tonight! One question, though, do you defrost the beans beforehand, or just chuck them in the pan in a frozen block?
They are really flavorful, but they're not spicy. The flavor is something else, I can't describe it. I guess it is most like umami.
