N.Y. Egg Cream Recipe

For years I have been making the classic New York drink called an Egg Cream. I could never figure out why it was calld an egg cream since it contained no eggs. It is a pleasant drink, light and thin like an ice cream soda, and flavorful. I decide one night to experiment and I put a stirred raw egg into the bottom of the glass in which I was about to make that night’s egg cream. The change was magical. It suddenly became as thick and flavorful as a
thick black and white milkshake

INGREDIENTS
  • 1 raw stirred egg
  • 3 table spoons chocolate syrup
  • 1/2 cup milk
  • 1 1/2 cup fresh seltzer
INSTRUCTIONS
  1. stir one raw egg and pour it into the bottom of a large tall glass
  2. Add 3 table spoons of chocolate syrup, followed by a 1/2 cup of milk. Stir thoroughly.
  3. Hold a bottle of seltzer 12 inches above the glass as you pour the seltzer into the glass and allow the seltzer to foam to the top . Stir once more and the drink and enjoy

  • egg cream is not supposed to have eggs in it

  • First: sacrilege.
    One "stirred" egg? Methinks it should be at least well beaten.
    I don't think people are so into eating raw eggs anymore.
