A recipe similar to Crusty Corn has been in my family for decades, only we call it Corn Casserole. It used to be reserved for Thanksgiving but now I make it whenever. It's especially good as a main dish since my husband and I are mostly vegetarians. To make it more low fat as queeks mentioned, try leaving out all but maybe two tablespoons of butter, melt that over a low burner and saute some onions before adding the remaining ingredients. I beat an egg and add about a quarter cup of milk along with the corn and cornbread mix (half a box may be plenty if you don't want this to turn into mostly cornbread.)Some sour cream could be used instead of the milk. This is really great comfort food also. Thanks for your great website.-COLLAPSE
Sounds very tasty. Suggestions for a low fat/low calorie version as I'm not eating butter, regular sour cream any more.
