Sugar-free (and artificial sweetener free) Key Lime Pie Recipe

This recipe was based on the Key Lime Pie recipe from Dr. Atkins Diet Revolution book. I’ve amended a few ingredients to make this free from any artificial sweeteners. This is not really a “pie” since I’ve omitted any sign of a “crust” and used ramekins instead.

INGREDIENTS
  • 4 eggs, separated
  • 1 cup heavy cream
  • 1/2 cup lime juice
  • 1 T. lime zest
  • 1 package unflavored gelatin
  • 1/2 t. stevia powdered extract (I used NOW brand)
  • 1 T. erythritol
  • 1 T. vanilla
  • 1/4 t. vinegar
INSTRUCTIONS
  1. Beat egg yolks for 2 minutes. Slowly add lime juice until incorporated.
  2. Over low heat, cook egg mixture, stirring constantly. Cook until thickened. Remove from heat. Add gelatin, half of stevia (1/4 t.) erythritol. Stir until dissolved. Cool mixture in refrigerator.
  3. Beat egg whites, with vinegar, until stiff peaks form. Set aside.
  4. Beat heavy cream with vanilla and remaining half of stevia.
  5. Fold egg yolk mixture into the egg whites. Then, fold combined egg mixture into whipped cream. Pour into 6 ramekins. Allow to set in refrigerator (about 2 hours).

  • How do you like the NOW brand in compared to Sweet Leaf? I tried the Vitamin World store brand of Stevia and it tasted like soap! I like the Sweet Leaf though.

  • Where can I get erythritol and what is it?
