Sweet Chili Sauce (Hot) Recipe

Goes well with spring rolls and some finger foods. dried chillies or fresh red chillies can be used for this recipe.
INGREDIENTS
- 1/ clove garlic, minced
- 2 tablespoons of vinegar
- 1 cup of cold water
- 2/3 cups white sugar
- 1 teaspoon salt
- 4 teaspoons cornstarch
- 1 teaspoon fish sauce (optional)
- 2 teaspoons chili powder
- some chili flakes or fresh chillies chopped
INSTRUCTIONS
- Combine all ingredients together until well blended. This is also the time to check the taste of the sauce. On liquid form, the sauce will taste a bit more tangier/sourish compared to the finished product.
- simmer on medium heat or until sauce thickens.

What I tried and my thoughts: too much garlic, considering reducing to 1/2 a clove. Little bit too much starch, considering subbing water for fruit juice to build a more tarty taste. Chili powder was right on target. I used green jalapeno's (missing Spanish N ~) instead of red based on lack of red ones at local market. I am considering using dried red chili's. In my opinion, when I use water to make Asian dipping sauce, it gives it a bland flavor. It has little body to the sauce. It would've probably turned out better if I used red chili's.
