Sweet Chili Sauce (Hot) Recipe

Goes well with spring rolls and some finger foods. dried chillies or fresh red chillies can be used for this recipe.

INGREDIENTS
  • 1/ clove garlic, minced
  • 2 tablespoons of vinegar
  • 1 cup of cold water
  • 2/3 cups white sugar
  • 1 teaspoon salt
  • 4 teaspoons cornstarch
  • 1 teaspoon fish sauce (optional)
  • 2 teaspoons chili powder
  • some chili flakes or fresh chillies chopped
INSTRUCTIONS
  1. Combine all ingredients together until well blended. This is also the time to check the taste of the sauce. On liquid form, the sauce will taste a bit more tangier/sourish compared to the finished product.
  2. simmer on medium heat or until sauce thickens.

  • What I tried and my thoughts: too much garlic, considering reducing to 1/2 a clove. Little bit too much starch, considering subbing water for fruit juice to build a more tarty taste. Chili powder was right on target. I used green jalapeno's (missing Spanish N ~) instead of red based on lack of red ones at local market. I am considering using dried red chili's. In my opinion, when I use water to make Asian dipping sauce, it gives it a bland flavor. It has little body to the sauce. It would've probably turned out better if I used red chili's. I really think this sauce can be improved by subbing the water for a more acidic fruit juice. Thanks for blogging-COLLAPSE
