Caribbean Macaroni Pie Recipe
Macaroni pie is a traditional Caribbean Sunday dish. Every West Indian loves it. It is served with stew chicken,beef or pork ,callaloo, stewed peas and a fresh green salad.
- 400 Gms. Macaroni
- 400 Gms. grated cheddar cheese
- 1 tin cream style corn
- 1 tin evaporated milk
- 1 Egg
- Salt
- Optional Bacon bits, raisins.
- Drain thoroughly
- Mix macaroni with 300 gms.cheese add peas and carrot, cream style corn, and cooked bacon,
- Beat egg in milk and add to mixture,
- Pour mixture into casserole dish
- Cover mixture with remaining cheese
- Baked in a covered dish at 350 degrees for one hour
- Leave to cool slice and serve.
- The pie can be made without the peas and carrot, bacon and cream style corn . If you are making a plain pie use a bit more cheese

I live in the Caribbean and love macaroni pie. To answer a few of the questions. Yes, boil the macaroni in water and drain before using. 400 grams is a little less than a pound, so use one pound of macaroni and one pound of cheese. The peas and carrots are optional, you can use a handful of each if you want. My favorite add-in is a little finely chopped red and green pepper.
I'd assume you boiled the macaroni beforehand, because i make a similar style Caribbean macaroni quite regularly.
Nowhere in the list of ingredients does it have peas or carrots. How much are you supposed to add to this?
can someone convert this to american measurements for me? I'd love to make this!! Thanks
this may sound stupid, but am i using cooked macaroni, or is it cooking in the milk and cream corn?
very nice-I also make it with a bechamel sauce for my friend who likes less cheese--I use milk,flour and some cheese,salt and pepper for the sauce
