Tomato Sauce with a hint of Cheese Recipe

This is a great recipe for tomato sauce. It’s very simple, and takes about 45 minutes to make. I make it about once every two weeks and everybody always enjoys it; I hope you do too.

INGREDIENTS
  • 5 or 6 large tomatoes
  • 2 yellow onions
  • 3 cloves of garlic
  • 1/4 a cup of goat cheese
INSTRUCTIONS
  1. Cut up the tomatoes into small pieces (about 1/2 inch sq.). If you want a less chunky sauce then be sure to cut the skin off of the tomato.
  2. Chop both onions into relatively small pieces (depending on how you like it.)
  3. Peel the garlic and smash it with a garlic smasher.
  4. First, simmer the onions in a large pan until they become yellow.
  5. Now add all of the tomatoes and stir around. Keep the tomatoes in the pan until most of the juice evaporates.
  6. Put in whatever spices you like best, I usually use oregano, basil, and thyme. Make sure to add some salt and pepper.
  7. With about 6 minutes left dump the garlic in the pan and stir some more.
  8. After putting the sauce on the pasta immediately mix the goat cheese in with everything else.

I also like to mix in some Parmesan.
