Chocolate Coca-Cola Cake Recipe

Two American classics that are welcome at any summer celebration, chocolate and Coca-Cola, combine to create a delicious and easy cake with a sweet twist.

INGREDIENTS
  • 2 cups flour
  • 2 cups sugar
  • 1 can Coca-Cola
  • 3 sticks margarine
  • 2 eggs
  • 6 tablespoons cocoa powder
  • 1/2 cup buttermilk
  • 1 teaspoon baking soda
  • 1 teaspoon vanilla
  • 1 1/2 cups miniature marshmallows
  • 1 box powdered sugar
  • 1 cup chopped pecans, if desired
INSTRUCTIONS
  1. Mix flour, sugar, and baking soda in a large mixing bowl and set aside.
  2. Bring 2 sticks margarine, 1 cup Coca-Cola, and 3 tablespoons of cocoa powder to boil in a small saucepan. Mix until well incorporated.
  3. Pour the hot mixture over your flour mixture, adding eggs, 1/2 cup marshmallows, and buttermilk.
  4. Pour batter in a greased cake pan and bake at 350 degrees for 30 minutes.
  5. To make icing, mix 1 stick softened margarine, 6 tablespoons Coca-Cola, 3 tablespoons cocoa powder, 1 teaspoon vanilla, 1 cup marshmallows, and 1 cup pecans. Stir and pour over hot cake.

  • Have made this cake before and YES the powdered sugar goes in the icing. You stir it in at the end and when smooth it should be thick but still runny enough to practically spread itself over the hot cake. Then cool it will resemble fudge. When done right this is an AWESOME chocolate cake.
