A Healthy Gluten-Free Carrot Cake for Memorial Day Recipe

I find this to be the perfect time of year for carrot cake. It’s an ideal dessert for cookouts, picnics and graduation parties. This Carrot Cake is Gluten-Free with Vegan Coconut Cream Frosting. Enjoy!

INGREDIENTS
  • 3 cups blanched almond flour
  • 2 teaspoons celtic sea salt
  • 1 teaspoon baking soda
  • 1 tablespoon cinnamon
  • 1 teaspoon nutmeg
  • 5 eggs
  • 1/2 cup agave nectar
  • 1/4 cup grapeseed oil
  • 3 cups carrots, grated
  • 1 cup raisins
  • 1 cup walnuts
INSTRUCTIONS
  1. In a large bowl, combine almond flour, salt, baking soda, cinnamon and nutmeg
  2. In a separate bowl, mix together eggs, agave and oil
  3. Stir carrots, raisins and walnuts into wet ingredients
  4. Stir wet ingredients into dry
  5. Place batter into 2 well greased, round 9 Inch cake pans
  6. Bake at 325 for 35 minutes
  7. Cool to room temperature and spread with coconut frosting
  8. Serve

  • I think that what people think is healthy,..often times isnt. Actually, I know this....
    And to be completely honest, from a nutritional perspective,..this recipe is MUCH more healthy than any other carrot cake recipe I have seen! And, from someone who also has a gluten allergy, it is MUCH appreciated.

    I love how you use agave nectar instead of sugar. Sugar is what people SHOULD be avoiding rather than fat rich foods like avocadoes, nuts and eggs as these delicious and natural little gifts from God contain essential fatty acids, plus, they fill you up quite quickly preventing you from over eating.
    (I try and try to eat a whole jar of peanut butter, but I always get full about half way down,.... :o( )

  • It's healthy because the nuts are a good fat and it's made with wholesome ingredients. Eating the equivalent of one egg (if you had a big slice) is hardly the end of the world.

    And being gluten free for celiacs (etc) makes it not poison, which I often consider to be an essential quality of healthy food.

  • Almond flour, walnuts plus FIVE eggs? How can a recipe with all that fat call itself healthy?

  • Could this be made with rice flour instead of the almond flour?
