TASTY CHICK Recipe
This is an easy but fabulously tasty dish – it takes 5 minutes to make and 20 to 30 mins to cook. Very much comfort food and delicious with some creamy mashed potatoes and some greens – I like cabbage or spinach!
- 1 free range chicken breast per person - without skin
- 2 to 3 rashers of streaky bacon or pancetta per person
- Ready made green pesto
- Cream cheese with garlic
- Lemon juice to taste
- Black pepper
- Take your chicken breast and push a teaspoon full of cream cheese under the flap of the chicken breast.
- Next wrap your chicken breast in the bacon/pancetta. Place in an oven proof dish
- Repeat until all your chicken breasts are prepared.
- Squeeze your lemon over the chicken breasts and then drizzle pesto over them all. Season with freshly ground black pepper
- Cover your dish with tin foil or lid and bake in the oven at 200 degrees celcius for 20 to 30 mins. Serve on a bed of wilted spinach with creamt mash! YUM YUM!!
