Pasta La Vista Recipe

For a defiant and stinky and satisfying for dinner some evening alone.
INGREDIENTS
- 1 oz. blue cheese
- 1 clove garlic
- 2 tbsp cup onion
- linguine noodles
- butter
- salt & pepper to taste
INSTRUCTIONS
- Mince the garlic and the onion (for a single serving, you need about 1/4 cup). Crumble the blue cheese.
- Cook the linguine noodles (other your favourite noodles), al dente. (If you like you can rinse the raw onion and raw garlic in the hot pasta water to take the sharp edge off these aromatics.)
- Toss hot cooked pasta with blue chees, minced onions, minced garlic with a dollop of butter. Season with salt and pepper to taste. Dive in.

I make a version of this based on a recipe I got from Mediterranean wholesalers in Melbourne.
The main difference is that they soaked dried porcini and roughly chopped it before tossing it in along with the reserved liquid from the soaking (a beautiful stock) and then shredding some parsley (continental naturally) on top before serving.
