it is a family interpretation of a very well known turkish recipe

INGREDIENTS
  • 3-4 green peppers (any kind, you should end up with 3-4 cups of sliced peppers)
  • 5-6 tomatoes
  • 4 eggs
  • cheese (1 cup feta and 1 cup any other cheese will fry nice in the oven)
  • 2 table spoons olive oil 2 table spoon buttter
INSTRUCTIONS
  1. use half normal half hot pepers if you like
    slice the pepers as thin as possible, remoce the skin and the seeds of tomatoes, cube them as small as possible, grate the feta and other cheese ( I use parmesan)
  2. fry the peppers in olive oil in a non stick pan, try not to burn them
  3. when pepper is almost cooked, pour cubed tomatoes to the pan and fry for a minute, turn down the heat, cover the pan, leave it for 10 minutes
  4. when tomatoes become soft and tender and half of the tomatoe juice gone, add 4 eggs at once and stir very fast until the eggs half done
  5. turn the heat off, add feta and butter and stir again, add salt and black pepper as much as you like, do not forget to taste before feta is salty already
  6. but the mix in a oven bowl (donot forget to oil if), cover with the second cheese, keep it very hot oven for 10 minutes (I use the grill mode for the last 2-3 minutes but I always keep my eye on it)
