omega 3 granola Recipe

This recipe is adapted from The Breakfast Book by Marion Cunningham. I wanted to make a breakfast cereal without sugar or cholesterol to sprinkle on my granola in the morning, homemade, of course!

INGREDIENTS
  • 4 cups oats
  • 1/2 C. maple syrup
  • 1/3 C. grape seed oil and enough flaxseed oil and hazelnut oil to make 1/2 oil in all
  • 1/2 tsp. freshly ground nutmeg
  • 1/2 tsp. cinnamon
  • salt to taste
  • 1 C. chopped hazelnuts
  • 1/4 C. ground flaxseeds
INSTRUCTIONS
  1. Measure oats into a largish bowl and stir in the maple syrup and oils until well covered.
  2. Stir in spices, salt, nuts and flaxseeds.
  3. Cover a jellyroll pan with parchment paper and evenly spread the granola over it.
    Bake in a 300 degree oven (preheated, please) for 30 minutes or until golden.
    Stir the granola every 10 minutes while baking.

    Granola on granola action? Overkill. Granola to sprinkle on yogurt maybe?
