Hearty Cornmeal Waffles Recipe

Great served with toasted pecans. As well as a spicy Blood Orange Syrup.

INGREDIENTS
  • 1 1/2 cups cornmeal
  • 1 1/2 cups AP flour
  • 5 tsp baking powder
  • 1/2 tsp salt
  • 3 T sugar
  • 4 eggs - separated
  • 2 cups buttermilk
  • 6 T melted butter
INSTRUCTIONS
  1. Mix dry ingredients in a big bowl.
  2. Mix egg yolks with buttermilk. Add to dry ingredients, mix. Add melted butter.
  3. Beat egg whites until stiff. Fold into moist batter.
  4. Cook according to your waffle iron instructions.
  5. Eat!
