Lemon Pepper Tuna & Corn Recipe

This is a quick-and-easy recipe for those times that you find yourself raiding the cabinets for a fast meal. This is an excellent sandwich filling, or main dish when served atop rice.

INGREDIENTS
  • 1 can of yellow corn, drained
  • 1 can of albacore tuna, drained
  • 3 tbsp lemon juice
  • salt to taste
  • black pepper to taste
INSTRUCTIONS
  1. Simply mix the ingredients and warm in a skillet or pot and serve hot, or mix and allow to chill.
  2. Optionally, choose a can of “fiesta” style corn with chopped chilies for an added kick.
