Lemon Pepper Tuna & Corn Recipe
This is a quick-and-easy recipe for those times that you find yourself raiding the cabinets for a fast meal. This is an excellent sandwich filling, or main dish when served atop rice.
- 1 can of yellow corn, drained
- 1 can of albacore tuna, drained
- 3 tbsp lemon juice
- salt to taste
- black pepper to taste
- Simply mix the ingredients and warm in a skillet or pot and serve hot, or mix and allow to chill.
- Optionally, choose a can of “fiesta” style corn with chopped chilies for an added kick.
