Open Faced Nicoise Po' Boy Recipe

I love Nicoise Salad and I love sandwiches. I am also lazy so this creation works for me.

INGREDIENTS
  • toast (one slice)
  • fried egg (one egg fried hard)
  • anchovies (approximately 5)
  • pitted green olives (half cup)
  • garlic (1 tsp)
  • sriracha (to taste)
  • green beans (six green beans - steamed unless canned)
  • Potato Chips (Kettle brand salt & fresh ground pepper)
INSTRUCTIONS
  1. Roughly chop pitted green olives and garlic.
  2. Toast your bread.
  3. Fry egg hard.
  4. Spread chopped pitted green olives and garlic on toast.
  5. Lay fried egg over green olives and garlic mixture.
  6. Arrange anchovies and green beans atop fried egg.
  7. Crush potato chips and sprinkle over top of po’ boy and cover with sriracha.
