A blend of fruit, yogurt, and a touch of honey, this smoothie makes for a tasty breakfast or snack. And yes, it has tofu in it, but don’t let that be a turnoff—the tofu’s only there for texture and the health factor. For an extra boost, stir in two tablespoons of soaked chia seeds before serving.

What to buy: Silken tofu has a custardlike texture and is ideal for puréed dishes like sauces and smoothies. It can be found in vacuum-packed, shelf-stable containers in the Asian section of your grocery store.

Game plan: If you’ve made your own regular soft tofu you can use it here, though we prefer this recipe with silken tofu.

INGREDIENTS
  • 2 cups ice
  • 2 ounces silken tofu
  • 1 medium banana
  • 1 cup strawberries, hulled and quartered
  • 1/3 cup vanilla yogurt
  • 1/4 cup apple juice
  • 2 tablespoons honey
  • 1/8 teaspoon ground nutmeg
INSTRUCTIONS
Combine all of the ingredients in a blender and process until smooth, about 1 minute. Serve immediately.

  • Why add ice? It's just frozen water! Add frozen FRUIT, it's a great way to use the bagged frozen fruit, and it keeps your drinks from getting watered down. Or just freeze fresh fruit during the summer, and keep it ready to use all year.

  • Why mess with making tofu? Very Vanilla Silk does a super job. My perfect breakfast for years has been 8 oz V V Silk, 4 to six (depending on size) frozen strawberries, a good handful of frozen blueberries, 1/3 cup quick cooking oatmeal, one Wheetabix bisquit. If you want you can add some flax seed but I don't bother with it. Try it! You'll love it !

  • Tofu??? That doesn't sound right. Seems like these days they make smoothies from anything. I may actually try this one, as I have never taste a tofu smoothie. Probably I am the classic <a href="http://www.fruitsmoothierecipes.me.uk/">fruit smoothie</a> lover.

  • Bees are not animals...Honey is a natural product. Like sugar, Stevia is a plant and is more sweet, but not as processed as sugar is. Oh, did you hear that carrot scream as the illegal immigrant worker pulled it out of the ground...

  • plus plantains are CHEAP and can be frozen just like bananas.

  • I have actually found that plantains work great in smoothies for the texture factor (make it creamy like tofu would). I usually go half on plantains and bananas or put a full plantain in there. yummy.

  • Sounds like she's vegan, and honey is an animal product, so it's verboten.

  • YUMMM. up the silken tofu and omit the yogurt; and some ground flax seeds and you have a great vegan smoothie. I also don't eat honey; so would sweeten with stevia. Also if you use frozen berries and frozen banana, then add some water (probably 1+ cup) no need to put wear & tear on blender with the ice cubes.
