Goat Cheese Salad Recipe
The goat cheese may be plain or have herbs in it, whatever you prefer
The only trick to this is the cheese must be melted immediately before serving You can cook the peppers ahead of time
Any greens can be used other than iceberg lettuce
- 2-3 red peppers, cut into strips
- 4-6 oz goat cheese
- 4-6 cups salad greens, mixed
- raspberry vinaigrette dressing or balsamic dressing
- olive oil
- balsamic vinegar
- Add 1 tbsp olive oil and 3 tbsp balsamic vinegar to small frying pan, add bell peppers and cook over medium heat, until pepper strips are soft and a bit “black”. You should add more balsamic if it all get absorbed while cooking
- Remove peppers and place goat cheese in same frying pan. Melt cheese until it resembles softened ice cream. Remove from heat
- Place salad greens in bowl and pour melted cheese over greens. Add bell peppers on top of goat cheese. Dressing may be added now or allow guests to add it themselves. Toss salad immediately before serving
