	<li>In a large sauce pot:</li>
		<li>Sautee diced onion until just tender in the olive oil (2-3 minutes) over medium heat.</li>
		<li>Add can of diced tomatoes. For a more tomato-based taste, puree the tomatoes in the blender or food processor for about 30 seconds to smooth.</li>
		<li>Add frozen vegetables, making sure they are separated (pound lightly for about 10 seconds to break up chunks of frozen vegetables)</li>
		<li>Add optional ingredients</li>
		<li>Add six cups of water</li>
		<li>Add salt and pepper to taste</li>
		<li>Simmer on low heat for 45 minutes to an hour</li>
