Jose's Hangover Mash Recipe

Difficulty: Easy | Total Time: 10-30 minutes depending on how much you drank the night before | Active Time: | Makes: 2-3 servings

Inspired by hangover hunger and a lack of delivery options. Perfected by simplicity. Start with too many margaritas the night before and end the day feeling satisfied and well, likely- cleansed.

INGREDIENTS
  • 1 can corn kernels
  • 1 can beans (black, pinto, refried, any kind will do)
  • 1 jar salsa
  • 1 package of cooked rice (whatever you have on hand). About a cup or two cooked.
  • (optional) 1 can of any of the following: chicken breast, tuna, salmon or crab meat
INSTRUCTIONS
  1. Send some texts out asking if anyone found your dignity last night. I recommend a bloody mary if you can get your hands on one to ease the pain. Find a big skillet or pot… if you can’t, get a big microwaveable container.
  2. Stovetop: Drain the corn and beans (and the meat if you’re adding it) and add to the pot/pan with the rice and salsa. Cook on low to med heat and stir occasionally until it’s all hot (about 5-10 min).
  3. Microwave: Drain the corn and beans (and the meat if you’re adding it) and add to the container with the rice and salsa. Microwave 2 min at a time stirring in between till it’s all hot.
  4. Remove from heat and mix in the cheese still it’s gooey. Top with your whatever you’d put on a taco (sour cream, jalapenos, hot sauce, lettuce, tomatoes, etc). Smash chips on top and eat.
  5. All portion sizes are flexible depending on what you like.

  • Corn kernels and canned fish... I think I would rather stay drunk too!

    No offence but..... YuCK!

  • I rather just stay drunk. keep the beers flowing

  • Using ground turkey breast, I tried this after a night of excess and, indeed, it cured what was ailing me! Simplicity is seriously underrated...
