Last meal pasta Recipe

This is about the simplest dish in the world – and one of the most delicious. I’d order it as my last meal, if I found myself in a situation that called for one…

INGREDIENTS
  • Generous bundle long pasta - spaghetti, linguini etc
  • Rounded tablespoon sundried tomato paste in olive oil (NOT sundried tomato 'pesto').
INSTRUCTIONS
  1. Cook the pasta in boiling water till al dente.
  2. Drain pasta, put into serving bowl.
  3. Add dollop of tomato paste. Stir. Eat.

  • I usually add a dollop of ketchup to the used pasta water so I can have a bowl of "tomato soup" as the first course. As they say, "Waste not, want not!"

  • The sundried tomato pesto sounds MUCH better.

  • This kind of reminds me of my slightly more desperate version -- I often make pasta and then serve it with olive oil and sundried tomato and oregano salad dressing. If I have a little parmegiana to grate into it, so much the better.

    Well, 'serve' is a bit of a misnomer there. It's not like I'd ever feed that to anyone else! At the end of a long day, though, when the cupboard is bare...
