新生姜の甘酢漬け Recipe

新生姜の季節に毎年作ります。たくさん作っておくとはしやすめに重宝しますよ。
INGREDIENTS
- 新生姜 500g
<調味料>
- 酢 2カップ
- 砂糖 200g
- 塩 適量
INSTRUCTIONS
- 新生姜の汚れを落とし、薄切りにして塩もみして1時間ほどおいておく。
- 沸騰したお湯に[1]をいれ、さっと湯通しする。
- 酢と砂糖を小鍋にいれて沸騰させ、冷ましておく。
- [3]に[2]をまぜて、煮沸した密閉容器にいれて出来上がり。みるみる薄いピンク色に変わってきれいですよ。

Sweet pickled seasonal ginger
I make bunch when ginger season arrives (March through September). It comes handy when you stock them.
INGREDIENTS
Ginger 500g
Vinegar 2カップ
Sugar 200g
Salt
INSTRUCTIONS
1. Clean gingers, slice thin, rub salt and leave about an hour.
2. Put (1) in boiled water and rinse lightly.
3. Put vinegar and sugar in a small pan to boil and then, cool to rest. Mix (3)&(2)...+READ
