Breakfast Fried Rice Recipe

A little twist incorporating traditional breakfast ingredients and rice.
INGREDIENTS
- 2 cups cooked rice
- 5 strips bacon, chopped
- 3 eggs (also works with egg whites)
- 1/3 cup soy sauce
- 3 green onions, chopped finely
- Salt and pepper, to taste
INSTRUCTIONS
- Cook rice and set aside.
- In a large skillet cook the bacon over medium heat.
- Once the bacon has browned, drain half the oil and push the bacon to one side of the skillet.
- On the other half of the skillet, add the 3 eggs and scramble until cooked.
- Turn the heat down to low. Add the rice until all ingredients are mixed.
- Add the soy sauce evenly over the rice and mix until the rice takes on a light brown color.
- Add the chopped green onion.
- Salt and pepper to taste.
- Serve with hot sauce – either Sriracha or Frank’s Red Hot.

if you turn the temp down this soon you won't fry the rice at all. i prefer to go more traditional. remove the bacon from the pan, pour off half the bacon grease (not oil) and lightly fry the rice in the bacon grease til it is slightly browned. create a well in the center of the rice, scramble the eggs in the well, slowly mixing the egg into the rice. I often throw in a handful or so of frozen peas and carrots for color, or if i have some left over bell pepper pieces (hopefully red or orange), then the soy sauce. the green onion mixed in just before serving.
depending on what is in the fridge (thats the point of fried rice right?) you can use ham, spam, bacon, sasuage, etc. for the meat.
you also forgot to mention that day old rice that has been in the fridge overnight is much easier to fry than fresh cooked rice which can turn into a gummy mess unless you are pretty skilled.-COLLAPSE
do u think its possible to make it for one ? or would it jsut mess up the whole dish ?

My favorite fried rice recipe. I add garlic to mine -yum. I must go make some now!
I eat variations of this most weekends for breakfast. I also like using sesame oil and garlic with the rice. Patty sausage is also a good subsitute for bacon in my opinion.
I can't take pork bacon, instead I can try lamb meat strips. I hope it' wouldn't change the recipe as much?
