Mac and Cheese -- gratin de macaroni Recipe

This is just the best recipe because it is simple and direct.

INGREDIENTS
  • Macaroni -- 500g
  • Crème liquide -- 500g
  • Pancetta -- 50g
  • Swiss Cheese -- 200g
  • Parmesan -- 40g
INSTRUCTIONS
  1. Cook macaroni one minute less than package says. If it is in advance make sure to rinse them under cold water so they don’t stick and they stop cooking (but it is better not to cook them in advance)
  2. Cut Pancetta in dices and roast them in the big pan that you will serve the mac and cheese in. Deglaze with the Crème. Boil.
  3. Add pasta in the cream. They finish cooking in there (on slow heat). Sturr until the pasta are perfectly cooked and the cream is thicker and basically wraps the pasta.
  4. Add parmesan and sturr, off heat. Then add swiss cheese on top and put under the grill for a few minutes, until the swiss cheese is crispy and slightly browned.
  5. Eat now, say with a steak or a roast chicken or by itself.
