  <instructions>

	<li>Strip rind from any number of oranges.&lt;&gt;
Cover with water, weight down and place in refrigerator overnight.&lt;&gt;
Scrape out all white, discard. &lt;&gt; Save water. &lt;&gt;
Cover with more water, simmer 2 hours, drain.&lt;&gt;
Add 2 cups sugar and FIRST water after boiling it down, cook 1 hour, drain off syrup. &lt;&gt;
Spread and dry in 250 degree oven for 1 hour</li>
		<li>&lt;&gt;Note: You can use any citrus fruit. Grapefruit &#38; Lemon work wonderfully.</li>
		<li>&lt;&gt;We always have batches on hand around Christmas.</li>
