This is what I’ve developed into my own apple pie. Everyone loves it!
2 9” Pie crusts (go thicker for a nice flakey crust)
9 to 10 apples- peel and slice thinly
juice of 1 orange, 1 lime and 1/2 of lemon
sm. amount of fresh ginger (press into paste) or 2 tsp. ground ginger
2 tsp. dried mint
1 tsp. ground nutmeg
1 tsp. cinnamon
2 tbsp. brown sugar
sprinkling of salt (optional)
- Make the pie crusts. Use cold butter, cold water and refrigerate the crusts for at least 1 hour. After rolling out the crusts refrigerate them again- this helps for baking the crusts right.
- Slice and peel all the apples into a bowl and add the juices and spices before the sugar. Add the above said amount of sugar and then taste it, if you would to add more then go ahead!!
- Lay the bottom pie crust in the pie pan, add the apples, cover with the top crust. Cutt of the excess and pinch the edges together. Go ahead and cut out some pretty designs on the top crust to let the pie vent. It is optional to put the pie back in the fridge until the oven is preheated to 400 F. Bake the pie for 30-45 mins. or until golden brown.
