Plum Cake Recipe
This cake is incredibly easy to make, tasty, and looks really beautiful (and impressive, if that’s what you’re going for) when cooked. The plums soften & bleed into the batter as they cook and their tart flavor is a great contrast to the sweet buttery cake. You can also experiment with other fruits (nectarines, peaches, persimmons, maybe figs).
- 1 cup sugar
- 1/2 cup unsalted butter
- 1 cup flour
- 2 eggs
- 1 tsp. baking powder
- 6 plums, halved
- lemon juice
- cinnamon sugar
- Cream butter and sugar. Beat in eggs, then flour and baking powder. Pour in baking/pie dish. Place plum halves cut-side down in a circle pattern on top of the batter. Sprinkle with lemon juice and cinnamon sugar. Bake @ 350 degrees for approx 1 hour, or until golden and a toothpick comes out clean.
