Elderflower Royale Recipe

The Champagne Cocktail was a favorite of the ’30s, and now it’s starting to come back. Adding a little elderflower liqueur brings it into the 21st century.
What to buy: St-Germain is an elderflower liqueur that has won over bartenders. It can be found at high-end liquor stores and online.
INGREDIENTS
- 1 small sugar cube
- 10 dashes angostura bitters
- 1 ounce St-Germain elderflower liqueur
- 6 ounces chilled brut sparkling wine
INSTRUCTIONS
Soak the sugar cube with the bitters and place it in the bottom of a chilled champagne flute. Add the elderflower liqueur, top with the sparkling wine, and serve.
I just made a cocktail for my blog today using St Germain; it is so hard to describe but also so wonderful. So hard to find in Denver that I was lucky to find a small, what I call airplane bottle, on the shelf of my favorite liquor store.
It's worth the search though and I appreciate the tip about Peychaud's too...I've just never been that fond of Angostura bitters.

With that much Angostura, you may as well leave the St. Germain out, it will take the whole cocktail over. A couple dashes of Regan's Orange or Peychaud's Bitters and finish it with a lemon twist squeezed over top would allow the St. Germain to shine.
