San Francisco neighborhood joint Nopa has garnered a lot of attention for its tasty, straightforward food. While we enjoy menu staples like the Charred Eggplant Salad, it’s the drinks that keep us coming back. The Sunshine Bitters in this recipe are made in-house and used in this aptly named cocktail, which derives its moniker from an opal that glows reddish under light.

What to buy: St-Germain is an elderflower liqueur that has won over bartenders. It can be found at high-end liquor stores and online.

Amontillado sherry is a medium-dry sherry with a distinctive nutty flavor.

INGREDIENTS
  • 2 parts amontillado sherry
  • 1 part St-Germain elderflower liqueur
  • 3 dashes Sunshine Bitters
  • Ice
  • Lemon twist, for garnish
INSTRUCTIONS
Stir together sherry, elderflower liqueur, and bitters over ice and strain into a sherry glass. Garnish with lemon twist and serve.

  • When I designed this drink, it was made with a fino or a manzanillo and I really think it is better that way
