Pecan Crusted Oven Baked Chicken Recipe

I’ve been experimenting with low carb chicken options over the past 6 months —and this one really works well!
INGREDIENTS
- 0% Fat Fage Yogurt - enought to cover chicken in a zip lock bag
- 1/2 cup toasted pecans
- 1 cup "carb quick" or 1 cup flour (Carb Quick is a low carb flour alternative)
- leg and thigh chicken pieces
- 1/2 tsp paprika
- 1/2 tsp salt and pepper
- good quality olive oil cooking spray
INSTRUCTIONS
- Place chicken pieces in a zip lock bag and cover with your Fage Yogurt. Put in the refrigerator for 1 hour.
- Pre-heat oven to 400 degrees
- Combine all the dry ingredients in a zip lock bag.
- Remove a piece of chicken from the yogurt bag and allow most of the yogurt to drain off before placing in the dry ingredients bag.
- Toss in bag and place each individual piece of chicken on a sheet pan that has been covered with a sheet of parchment paper and sprayed with a good quality olive oil spray.
- Bake for 30 minutes and then turn over the pieces and bake for another 30 minutes.
Remove and allow to sit for 3 minutes before serving.
