Apple Ginger Cupcakes Recipe

I made these for a friend at school, he requested the flavors and I had fun with them.

INGREDIENTS
  • 1 1/2 cups all-purpose flour
  • 1 Tbs ground ginger
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/4 cup chopped candied ginger
  • 1/4 cup diced apple, whatever kind you like best
  • 1 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, room temperature
  • 3 eggs
  • 3/4 cup milk
INSTRUCTIONS
  1. Pre-heat oven to 350, line cupcake pan with paper liners.
  2. Sift together the flour, ground ginger, baking powder and salt into a small bowl. Stir in the candied ginger and apple.
  3. In a large bowl, use an electric mixer to beat together butter and sugar until well combined. Add eggs, one at a time, beating after each addition.In a large bowl, use an electric mixer to beat together butter and sugar until well combined. Add eggs, one at a time, beating after each addition.
  4. Alternately beat in flour mixture and salt, making three additions of flour mixture and two of milk. Beat until smooth.
  5. Scoop batter into pan(s) and bake 24-26 minutes or until golden brown and top springs back when lightly touched. Cool in pan on wire rack for 10 minutes, then remove from pan and cool completely.
