Noodle Soup Recipe

This is a really easy and yummy soup I find very comforting and quick to prepare. Im going to give the basics but feel free to add any tofu, meat, chicken, veg. etc.

INGREDIENTS
  • 4 cups Chicken Stock/Broth or water with bullion
  • A handful of Angel Hair pasta broken in 1/2
  • 4 scallions white and green parts or any onion diced
  • few dashes of hot sauce (to taste)
  • few dashes of Soy sauce (to taste)
  • few grindings of black pepper (to taste)
  • 2 Eggs
INSTRUCTIONS
  1. Bring the chicken stock to a bubble and add broken pasta. Let it boil a few min. (2-3) and then turn the heat to low for simmering.
  2. Add the chopped scallions, hot sauce, soy and black pepper. Let simmer for 5 min.
  3. At this point you can add the eggs in one of two ways. I prefer to crack them right into the pot and use my fork to break the yolk. I like the way the whites and yelllow sets apart.
    Option 2: Whisk the eggs first and then pour them into the soup in one stream.
  4. To serve I like get lots of yummy noodles into a nice deep bowl and then ladle yummy broth to surround the mound of noodles. Eat with chopsticks and drink broth from the bowl or use a fork and spoon. :)

  • I know this is my recipe but I just wanted to say I made last night for dinner and my husband and I agreed how much we really love this. You should really try this one guys!!
