This variation on the traditional Pimm’s cup calls for Ginger Beer – the spicier the better. Adding apple and orange slices bring a fruitiness to the party and the cucumber slices keeps it from being cloying.
INGREDIENTS
- 3 ounces Pimm’s No. 1
- Ginger Beer
- Slice of cucumber
- Slice of orange
- Slice of apple
- Mint spring for garnish
INSTRUCTIONS
- Pour Pimm’s No. 1 into a highball filled with ice.
- Add cucumber, orange, and apple slices.
- Top with Ginger Beer and garnish with mint sprig.

Not to be a stickler or anything, but one cocktail book I own calls Pimm's w/ ginger a Pimm's Rangoon, while a Cup is made with lemon soda. Just thought I'd share.
