Cornflake Chicken Recipe

Total Time: 1 hour | Makes: 4

My mother made this recipe for me growing up and it was delicious. Finally, she revealed it to me and it was a lot easier than I had thought. As a 25 year old man, this is an easy recipe and tasty.

INGREDIENTS
  • 2 cups Kellogg's corn flake crumbs
  • 1/2 cup grated or shredded parmasan cheese
  • 4 chicken breasts
  • 2 or 3 eggs
  • Salt and pepper
INSTRUCTIONS
  1. Preheat oven to 400 degrees.
  2. In medium sized bowl, mix corn flake crumbs, parmasan cheese, and salt and pepper to taste.
  3. Scramble eggs in separate bowl. Dip chicken thoroughly in the scrambled egg and place in corn flake mixture. Shake well enough to cover entire breast with crumbs.
  4. When finished, place chicken in a baking dish and place covered in oven for 30 minutes. After 30 minutes, remove the cover and cook for another 15-20 minutes or until cooked all the way through.
  5. ENJOY!

  • I think the recipe should read "beat (not scramble) eggs".
