Carrot Slaw

On a recent trip to France, my sister became addicted to the mustardy carrot slaw that is sold prepackaged in most grocery stores. While good, the store-bought slaw can be soupy and overly acidic. Instead, this version has a nice note of vinegar that doesn’t overtake the dish, and a little orange zest rounds things out. Also, this slaw travels well, so it’s great to take to picnics or potlucks.

INGREDIENTS
  • 2 pounds carrots, peeled and ends trimmed
  • 5 tablespoons country-style Dijon mustard
  • 1/4 cup extra virgin olive oil
  • 1/4 cup finely chopped fresh Italian parsley
  • 3 tablespoons minced fresh chives
  • 3 tablespoons red wine vinegar
  • 2 lightly packed teaspoons orange zest (from 1 medium orange)
  • 1 1/2 teaspoons kosher salt
INSTRUCTIONS
  1. Fit a food processor with the grating blade. With the processor running, feed carrots down the tube to grate them. (Use the hopper to push carrots through.) Alternatively, grate carrots on large holes of a box grater. (You should have about 6 cups.)
  2. Whisk together remaining ingredients in a nonreactive mixing bowl until evenly blended. Add carrots, and, using clean hands, toss together until they are well coated. Season well with freshly ground black pepper.
  3. Let marinate at least 15 minutes and serve.

    I, too, was in the South of France and my guy went to the deli to get lunch (I was on crutches) and he came bck with all sorts of fun things - carrot salad / slaw included. It had raisins in it. I made it today - with raisins, craisins, and a small handfull of sesame seeds (you could also do poppyseeds). I alo added a tiny pinch of Tarragon. Quite tasty.

  • Healthy, and easy to do recipe. It kind of remind me of "Kimchi" from Korea because it is also have to be tossed to coat everything with it's sauce. Love it.

  • raisins are a nice addition to a carrot slaw, for color and a dash of sweetness

  • You could also use broccoli bagged coleslaw which have carrots in it, and add a cup or so more, a lovely green and orange slaw for Easter

  • Absolutely delicious -- and easy! Doesn't need any salt, as the mustard has enough. What a delightful way to celebrate International Carrot Day (04 April).

  • Tip Diva: If you use cleans hands to mix it together then the carrots will break up and get well coated in the sauce.

  • After the ingredients are added, the carrots lump together... it's not smooth, like cole slaw. I used a box grater.

  • Top Diva, we here in the CHOW kitchen are not exactly sure what you mean by a "lump"- do you mean after the carrots are just grated or after all of the ingredients are mixed in?

  • What can you do to stop the grated carrots from sticking together in a lump?
