Thousand Island Dressing
At its worst, Thousand Island looks Pepto-Bismol pink and tastes like a pack of artificial sweetener. But at its best, it’s a tangy dressing loaded with olives, peppers, and hard-cooked egg. Try this recipe, and you’ll find it definitely belongs in the latter category.
- 1 cup Basic Mayonnaise or store-bought mayonnaise
- 1/4 cup ketchup
- 1 large hard-cooked egg, peeled and finely chopped
- 1 tablespoon finely chopped black olives
- 1 tablespoon finely chopped green bell pepper
- 1 tablespoon finely chopped white onion
- 1 tablespoon finely chopped parsley
- 1 tablespoon finely chopped chives
- Combine all ingredients in a bowl and fold together until well mixed. Season well with salt and freshly ground black pepper, and serve.

My variation (I don't claim it's 1,000 island--or even 895, marked down from 975) has these ingredients: Mayo, chopped shallots, chopped pickled beets, chopped gherkin or cornichon, capers, sun-dried tom. paste, celery salt, dry mustard, paprika, splash of vinegar (perhaps from the beet pickles). Yours looks good, though. I guess mine needs hard boiled egg.
Is the homemade mayo a necessity? I've always found that homemade mayo is extremely intense and concentrated and using 1 cup of it for this dressing sounds really strong. Would store bought be acceptable? Also, the hard boiled egg seems very interesting: what does it do flavor-wise or texture-wise?
digkv: you can use any mayo you like for this recipe but we like the tang of our Basic Mayo recipe in this dressing. The egg adds a richness to the dressing that makes it truly thousand island.
How long does this last in the fridge?? Can it be frozen??

No chopped pickles? I thought that that was what made 1000 Island, 1000 Island!
