Cinnamon Syrup Recipe

This spicy syrup is a natural in the tequila-based La Pinela cocktail, though it would also be a great alternative topping for pancakes in the morning!
INGREDIENTS
- 1 cup granulated sugar
- 1/2 cup water
- 2 cinnamon sticks
INSTRUCTIONS
- Place all ingredients in a small pot over medium-high heat. Stir to combine.
- When mixture boils, reduce heat to medium low and simmer for 5 minutes, stirring occasionally until sugar is completely dissolved. Turn off heat and let mixture cool to room temperature.
- Once mixture cools, transfer syrup and cinnamon sticks to an airtight container and store in the refrigerator until ready to use.
This was easy and made a gently-flavored sweet syrup. I continue my search for a deeply-flavored spicy-hot version.
