Leftover Chinese Takeout Rice Pudding Recipe
When life gives you leftover Chinese takeout rice, make leftover Chinese takeout rice pudding! Seeing as most on-campus stores don’t carry many top-quality ingredients, we took what’s easy to find—instant vanilla pudding and nondairy creamer—and made do.
What to buy:
Instant vanilla pudding mix and powdered, hazelnut-flavored nondairy creamer can be found in most supermarkets.

- 1 tablespoon instant vanilla pudding mix
- 1/4 cup powdered, hazelnut-flavored nondairy creamer
- 1/4 teaspoon table salt
- 1/3 cup water
- 1 packed cup day-old Chinese takeout rice (white)
- Dissolve pudding mix, nondairy creamer, and salt in water in a medium-size microwave-safe dish. Add rice and stir to coat.
- Cover and microwave on high for 2 minutes or until hot. Remove cover, stir to combine, and let sit for 5 to 7 minutes to allow rice to soak up liquid. Serve.
As an ex-college student, this recipe offends me. And anyway, how come a mention of mcdonalds or any fast food junk place practically gets you thrown out of Chow figuratively speaking, but this chemically loaded, toxic post is actually being promoted?
I make rice pudding from leftover chinese take-out often, but I would never use this recipe. I prefer making my own custard rice pudding and it is extremely easy if you have the basic ingredients of milk and/or cream, eggs, sugar and some flavoring like vanilla or cinnamon.

Ew. Dorm food is less artificial than that. And honestly, I don't think I would have been able to find pudding powder and flavored nondairy cream powder on campus. Who eats those things regularly. Dorm food is all about cheap things everyone's willing to eat all the time: iceberg lettuce, fries and ketchup, hamburgers, etc.
I would take leftover rice, throw it in my rice cooker with lots of water, and crack an egg into it when it was done. If I added dry seaweed it was relatively nutritious and a nice tide me over meal.
Why would you choose to make rice pudding with leftover takeout rice rather than fried rice?
This food is not "low brow" - it is disgusting. As a college student, I made very creative use of the ingredient I had on hand - but this recipe offers only artificial, chemically glob. Any college student should be able to get their hands on milk and sugar - and that's all you really need to make a very simply rice pudding. Some raisins cinnamon/nutmeg, and vanilla aren't exactly rare ingredients either. Why take such a simple dish and ruin it?
Disgusting. Even for a college student. And even a college student can locate real milk and sugar just about anywhere in the world. Nothing wrong with recycling Chinese rice, I do it all the time, but plain rice pudding with some raisins tossed in would be vastly preferable to this chemical additive-laden slop. And you need much more liquid than 1/3 cup to make anything resembling rice pudding with 1 packed cup of cooked rice. Why is something this gross even posted on this website? Did the authors actually make it and eat it before recommending it? Can't you offer students anything better than this? Good Lord, they're better off eating in the cafeteria.
