This fruit salsa adds a bright accent to anything it tops; we especially like it on our Buttermilk Chicken. Just make sure to buy peaches and tomatoes at the peak of their ripeness, as they define the salsa’s flavor.

INGREDIENTS
  • 3 medium peaches, small dice (about 1 1/2 cups)
  • 2 medium tomatoes, small dice (about 1 cup)
  • 1/2 medium sweet onion, such as Vidalia or Maui, small dice (about 1/2 cup)
  • 1 tablespoon plus 1 teaspoon freshly squeezed lemon juice
INSTRUCTIONS
  1. Combine peaches, tomatoes, onion, and lemon juice in a small nonreactive mixing bowl. Season well with salt and let sit at least 20 minutes.
  2. Just prior to using, season well with freshly ground black pepper and mix thoroughly.

  • can't get fresh peaches where i am . can i use canned no sugar added peaches instead?

  • Sounds good. Am on a salsa making kick at the moment. Might try it with nectarines.

  • Just made this salsa and it is yummy. The one thing I will caution is to watch the amount of jalapeno you add. This salsa is blazing!

  • I made this and added diced jalapeno and cilantro, to give it a little more bite. It's perfect for summer, fresh and sweet. Served it with chicken for dinner, and there's enough leftover to snack on with chips. Yum.

  • Made the salsa with peaches and tomatoes purchased at farm stand 2 days earlier. A good basic recipe. I ate it with chips; would benefit from a hot pepper addition or perhaps cilantro.
